 Cut a tudela lettuce heart into four and place on a dish. Place on slice of pepper and two slices of Cecina from León on each quarter. Add two thin slices of sheep's milk cheese at the side and two strips of Cecina from León in a spiral shape in the centre. Dress with oil, vinegar and salt.
