Make a fan shape with the Cecina and roasted Bierzo peppers on a base of Sahagún leeks. Decorate, making a flower shape, with Bierzo pippin apples. Fill the swan shaped petit choux with foie gras mousse. Drizzle a little olive oil over the Cecina and the roasted Bierzo peppers fan. |
