Roll of anglerfish and Cecina from Leon with vegetables roasted in their own juice

Cut the anglerfish into rectangles, season with salt and pepper and roll them in very thin slices of Cecina from León. Wrap them tightly in cooking foil and shape them like sweets. Flash grill them and them in a 360º oven for 3 minutes.

Cut the roll obliquely in half. Pile up the roast vegetables in the centre of the dish, place the anglerfish to one side, leaning against the vegetables with juice of Cecina all around, garnished with threads of fried leek.
